We have developed complex food chains that deliver an amazing variety of foods to shops just round the corner. It is one of the great unsung miracles of Western Civilization. However, this very complexity and industrialisation has created new problems. We are highly dependent on a few varieties of grains, cereals and cash crops with ever decreasing genetic diversity. We are highly dependent on the transport system and the economy to keep the food supply flowing. This makes us vulnerable. We need to make sure that our food supply is secure and resilient. We must draw upon a diversity of food sources and ensure that we can feed ourselves locally in an emergency.
